You still brown the meat and cook the pasta in the same pan, but the sauce comes from beef broth, tomato paste, spices and a serious amount of real cheddar that you shred yourself. Ingredients

About one pound of ground beef, preferably very lean
One small onion, finely chopped
Two tablespoons of tomato paste, slightly heaping
One teaspoon of garlic powder
One teaspoon of chili powder
Two and a half cups of beef broth, plus a little extra if needed
One and one-quarter cups of uncooked elbow macaroni
Two and a half cups of freshly grated sharp cheddar cheese
Salt and black pepper to taste

Instructions

Set a large, heavy pot or deep skillet over medium heat. Add the ground beef and chopped onion. Cook, stirring and breaking up the meat, until the beef is fully browned and the onion has softened. Spoon out most of the fat if there is a lot in the pan.
Stir in the tomato paste, garlic powder, and chili powder until the beef is coated and the tomato paste darkens slightly and smells toasted. This wakes up the flavor and gives the sauce a deeper color.
Pour in the beef broth and stir well, scraping up any browned bits from the bottom of the pan. Bring the liquid to a gentle boil.
Add the uncooked elbow macaroni. Stir so every piece of pasta is submerged. Turn the heat down to keep the mixture at a lively simmer rather than a hard boil. Cook uncovered, stirring every couple of minutes, until the pasta is tender and most of the liquid has been absorbed. If the pan starts to look too dry before the pasta is ready, splash in a little more broth and keep going.
While the pasta cooks, grate the cheddar cheese. When the macaroni is tender and the sauce has thickened, take the pan off the heat. Add the cheese a handful at a time, stirring until it melts into a glossy, thick sauce. Season generously with salt and black pepper.
Let the skillet sit for two or three minutes before serving. The pasta will soak up a bit more of the sauce and everything will tighten up into that perfect spoonable, cheesy comfort food. Serve straight from the pan into bowls.

Turn it up to eleven

Add a pinch of smoked paprika or a dash of hot sauce with the chili powder if you want a little backstage heat.
Stir in a handful of baby spinach or a few tablespoons of finely diced bell pepper during the last few minutes of cooking for a bit of color and crunch.
