Ingredients
  

  • 4 tablespoons olive oil
  • ½ stick butter
  • 2 shallots, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 cups sliced mushrooms (baby bella, cremini, or button)
  • 1/4 cup white wine (Sauvignon Blanc or Chardonnay)
  • 1 tsp Salt
  • 1 tsp pepper
  • 1 tsp onion powder

Equipment

  • 1 Large skillet
  • 1 Wooden spoon or spatula
  • 1 Sharp Knife
  • 1 Cutting Board
  • 1 CD Player or Streaming Device
  • 1 Pink Floyd Wish You Were Here Album

Method
 

  1. In a large skillet, warm the olive oil and butter over medium heat until melted and slightly sizzling. ( I like Cast Iron)
  2. Add chopped shallots and garlic. Stir and cook for 2–3 minutes until fragrant and softened. Make sure the music is playing, put on Pink Floyd's Wish You Were here album and select Shine On You Crazy Diamond .
  3. Add the sliced mushrooms. Stir to coat them evenly in the butter and olive oil mixture. (The Best Part)
  4. After 5 minutes, pour in the white wine.
  5. Add the salt and pepper. Make sure you are humming to the music. The ingredients will feel your vibe
  6. Reduce heat to low and let the mushrooms simmer uncovered for about 20 minutes, stirring occasionally.

Notes

There’s nothing better than the smell of buttery mushrooms simmering in garlic and wine—unless you add a little Pink Floyd to the mix. Our Rockin’ Sautéed Mushrooms are the ultimate side dish for any meal that needs a little soul.  It's best to cook this in a cast-iron pan, but any pan will do. Adjust the ingredients to your taste as you cook. Do not overcook!
